Recipe for your Weekend Breakfast



So, you've run out of eggs. 
Or you're vegan. 
But its a sunny Saturday morning and you're hungry. I have the solution. 

These banana pancakes are moist and delicious, and best of all easy to make and eat. Promise. 


I've adapted the recipe from a comment I found on Taste one weekend morning whilst panicking about my lack of eggs. I've used it many times since then not because I don't have any eggs, but just because I love the taste.

Recipe below.


Banana, self-raising flour, plain flour, brown sugar and cinnamon.

Don't worry if the mixture is lumpy, its just the banana. The most important part is not to over mix!



Me: a drizzle of honey.

Boy: liberally applying 4 serves of Nutella. 

Banana Pancakes with no Eggs
Ingredients
1-2 Bananas
3/4 cups Plain Flour
3/4 cups Self Raising Flour
1 tablespoon of Brown Sugar
1 to 1 1/2 cups milk (vegans use milk substitute) 

Preparation
1. Mash bananas with a fork until there is only a few lumps.
2. Add dry ingredients
3. Add 1 cup of milk and stir in.
4. Add 1/2 cup of milk until the desired consistency is reached (not too thick or thin)
*Be careful not to over mix batter as pancakes will become rubbery*
5. Heat frypan and place a small amount of butter to stop pancakes from sticking.
6. Pour half the batter in, spreading it out as necessary.
7. Wait until bubbles appear in mixture, or underside is cooked, and flip.
8. Cook other side until slightly browned.
9. Serve with your favourite topping!

These pancakes are tasty, healthy and perfectly moist! 
The bananas give them a great texture and flavour, and are perfect for when you run out of eggs!
