There are some really tasty looking recipes on the internet, I would just need endless time to make them! This one caught my eye though and I thought I shall give it a try.
Here is a biscuit turned slice I made. Recipe follows.
From planned biscuits into -
A delicious slice. I guess the amount of butter and mixture consistency should have indicated this would happen.
They are perfectly matched with a glass of milk.
Enjoying a late night snack.
Recipe (adapted from Weelicious, I didn't have any chocolate chips so I made do with sultanas. Maybe even made them slightly healthier)
This recipe make 2 trays of large biscuits / slice pieces, consider halving the recipe for a smaller batch.
Oat and Sultana Biscuit Slice
Ingredients
250g unsalted butter, softened
1 cup brown sugar (light or dark)
1/2 cup sugar
2 larger eggs
2 teaspoons of vanilla extract
1 1/2 cups plain flour
1 teaspoon baking soda
1/2 teaspoon of salt
3 cups rolled oats
2 cups sultanas
sea salt flakes. *do not use iodised salt
Preparation
1. Heat oven to 180 degrees Celsius
2. Using a standing or hand mixer, beat together the butter and sugar until creamed, do this for around about 4 minutes. You can see how light the sugar mixture became above.
3. Add the eggs, one at a time, and vanilla until thoroughly combined.
4. Stir in flour, baking soda and salt into a separate bowl.
5. Add flour to butter/sugar slowly until combined.
6. Stir in oats and sultanas until well combined.
7. Drop rounded tablespoonfuls onto baking paper */**.
8. Press down each biscuit and top with a few sea salt flakes (not iodised remember)
9. Bake for 10 to 12 minutes, or until golden brown.
10. Cool and serve.
- * You can also bake them in silicone individual muffin tins, maybe in those cool dinosaur shapes I've seen around!!
- ** Make sure there is enough space between them for the biscuits to spread. Or go right head and make a slice.
Enjoy!
Much love, Laura
